Zucchini Crust Pizza

End of garden season often means thinking of new ways to use those zucchini.  Here’s one that isn’t quite like traditional pizza but still tastes good.

Crust:

  • 4 cups shredded zucchini
  • 4 eggs
  • 1 ½ cups mozzarella cheese
  • ½ tsp. basil

 Toppings:

  • 1 cup pizza sauce
  • 1 lb. sausage
  • Veggie toppings to taste
  • 1 ½ cups mozzarella cheese
  1. Shred the zucchini, place in a drainer, and sprinkle with a little salt.  Let set for 15 minutes. Preheat oven to 350 degrees while it is setting.
  2. While zucchini is draining, fry sausage and drain excess fat from it.
  3. Squeeze moisture from zucchini.  Mix zucchini, eggs, cheese, and basil.
  4. Grease an 11 x 13 casserole dish.  Spread zucchini crust mixture into the dish.
  5. Bake for 25 minutes. Remove from oven.
  6. Spread pizza sauce on crust. (I use my own home-canned from my garden.)
  7. Sprinkle with sausage and vegetable toppings.  Spread cheese on top.
  8. Bake until golden brown on the top.
